Spicy Cucumber Salad

  • 2 Cucumber, sliced very thin on the diagonal
  • 10-15 cherry tomatoes, sliced in half
  • 2 tbsp. olive oil
  • 1/2 tsp. dry hot pepper flakes (optional)
  • 1 tsp. ground cumin
  • 1/2 tap. lemon juice
  • 1 pinch black pepper, freshly ground
  • Cut cucumber and tomatoes. In a glass measuring cup, whisk together the oil, lemon juice, cumin, and pepper.
  • Drizzle lemon-oil dressing over the vegetables. Cover and refrigerate until ready to serve. Enjoy!
