Ingredients:
- 1.5 cups blanched almond flour
- 3 eggs
- 1 cup milk
- 1 cup sliced strawberries
- Ghee or coconut oil for cooking
- Mix all ingredients in a medium sized bowl using a hand blender or immersion blender until batter is a pourable consistency.
- Make one test pancake to check for desired thickness and texture.
- In a pan over medium-low heat (I set mine just below medium), melt some fat. Ladle about 1/4 cup batter onto the griddle for each pancake Place a small handful of sliced strawberries on top of the pancakes.
- Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown. Enjoy!
