Chicken Kale Meatballs


Ingredients:
  • 1 lb. ground chicken
  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 3 strips bacon, diced
  • 1 egg yolk
  • 1 tbsp. olive oil
  • 2 tbsp. tomato sauce
  • 1/2 cup chopped kale
Directions:
  • Preheat your oven to 400º. In a medium skillet over medium heat, add the diced bacon and cook for 3-4 minutes. Add the diced onion and the garlic and cook until the onion is translucent and the bacon is crispy.
  • Combine the ground chicken, egg yolk, 1 tablespoon of tomato sauce, kale and the bacon, onion and garlic in a large bowl. Season with salt and pepper and mix well. Form meatballs and roll into little balls, about 1 tablespoon of mixture per ball. Place the formed meatballs into a large baking dish about one inch apart. 
  • Combine 1 tablespoon of olive oil and 1 tablespoon of tomato sauce together in a small bowl and brush on top of each meatball. Pop into your preheated oven, and bake for 15 minutes. Enjoy!

Chicken Lettuce Wraps


Ingredients:
  • 2 tbsp. olive oil
  • 2 lbs. ground chicken
  • 1 medium onion, finely chopped
  • 2 tbsp. fresh ginger, minced
  • 3 cloves garlic, minced
  • 1/4 cup coconut aminos (a non-soy, soy sauce)
  • 1-2 tbsp. siracha sauce
  • 1/4 cup chopped scallions
  • 1 tsp lime juice
 
Directions:
  • In a large skillet, heat avocado oil and add the ground chicken. Sauté until cooked
  • Chop onion and ginger. Add onion, ginger and garlic.
  • Cook until the onion is soft. Add aminos, siracha and cook for about 3 minutes.
  • Add in scallions, and lime juice and stir to combine.Scoop the chicken into lettuce cups. Enjoy!

Chicken Kale Patties


These Patties are awesome. They're super easy to make, and they're ridiculously delicious.
 
Ingredients:
  • 2 green onion, finely chopped
  • 2 1/2 cups kale, finely chopped (leaves only)
  • 1 pound ground chicken
  • 1/2 teaspoon sea salt
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 egg
  • 2 tablespoons coconut flour
 
Directions:
  • Heat a large skillet over medium high heat with 1 teaspoon coconut oil. Add green onions and cook until tender, about 3 to 5 minutes.
  • Add kale and cook until wilted, about 2 to 3 minutes. Set aside.
  • Add ground meat to a large mixing bowl. Add salt, garlic, Dijon mustard, rosemary, egg and. coconut flour and mix well.
  • Divide your chicken mixture into even patties.
  • Coat a large non-stick pan with coconut oil or even better bacon grease to just coat the bottom. Add patties and cook until golden crust forms, about 5 to 6 minutes, then flip to the other side and cook until golden and cooked through. Enjoy!

Parmesan Spinach & Kale Balls


Ingredients:
  • Olive oil cooking spray
  • 1 (16-oz) package frozen chopped spinach, thawed and drained
  • 1 cup finely chopped onion
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1 (16-oz) package frozen kale, thawed and drained
  • 1 cup dry seasoned bread crumbs
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ½ tsp garlic powder

Directions:
  • Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment, or spray with cooking spray. In a large bowl, combine spinach, onion, the olive oil, and eggs together. Add kale, bread crumbs, Parmesan cheese, salt, garlic powder and black pepper; mix thoroughly using your hands.
  • Form mixture into 1½-inch balls and arrange on the prepared baking sheet. Bake in the preheated oven for 15 minutes; turn and continue baking until lightly browned, 10 to 20 more minutes. Enjoy!

Spiced Baby Kale & Chickpeas


Ingredients :
  • 1 tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 pound baby kale
  • 1/3 cup vegetable broth
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp garam masala
  • 1/4 tsp salt
  • 1 15-ounce can chickpeas, rinsed

Directions:

Heat oil in a cast iron pan over medium heat. Add garlic and cook, stirring, about 30 seconds. Add kale and cook, until bright green, . Add broth, coriander, cumin, garam masala and salt.

Cover and cook, stirring occasionally, until the kale is tender, 8 to 10 minutes. Stir in chickpeas; cover and cook until the chickpeas are heated through. Enjoy!

Kale and Cranberry Salad


Easy healthy kale saute with dried cranberries and balsamic vinegar. Gluten free, vegan, clean eating and paleo.

Ingredients:
  • 2 bunches kale
  • 1/4 cup sliced almonds nuts
  • 1 tsp chopped garlic
  • 1/4 sunflower seeds
  • 1/4 cup dried cranberries
  • 3 tbs olive oil
  • 4 teaspoons balsamic vinegar, or to taste
Directions:

Saute garlic in olive oil. Add kale until it is bright green. Meanwhile, in a cast iron skillet, toast the almond nuts. Allow kale and almonds nuts five minutes to cool, then toss together in a large bowl.
Add dried cranberries, sunflower seeds and drizzle with balsamic vinegar. Serve immediately. Enjoy!

 




Kale Fritters



Kale fritters is a wonderful snack and a great party appetizer.

Ingredients:
  • 2 Cups Kale leaves finely chopped
  • 2 tsp Ginger root minced
  • 1 tsp  Cumin
  • Large Eggs
  • 3 Tbsp almond Flour
  • 1 tsp Salt
  • Olive oil
Directions:
    Finely chop Kale leaves and ginger or use food processor. In a large bowl beat eggs add almond flour, salt and cumin. Once well combined fold in the kale mixture.
    Heat a large heavy skillet on medium high heat. Place a tablespoon drop of the mixture onto the frying pan. Cook each fritter for 4 minutes on each side. You should be able to fry 3-5 at a time.  Enjoy!









Sautéed Kale and Bacon Salad


 
Grilled kale and bacon bring smokiness to this warm, rich side dish that's perfect for a barbecue.
Ingredients:
  • 8 slices bacon
  • 2 bunches kale, stems removed and leaves finely chopped
  • 1/2 white or red onion, chopped
  • Sea salt to taste
  • Coconut oil
Directions:

Start by slicing the uncooked bacon into 1/2 inch pieces. In a large skillet, cook bacon pieces over medium-high heat until nicely browned. Remove from pan and set aside. Over medium heat, cook the chopped onion for several minutes until slightly browned.

Add chopped kale and stir continually until the kale is wilted. You may want to add a bit more coconut oil at this point. Remove from heat and add bacon and salt to taste. Stir until combined. Serve immediately. Enjoy!
