Ingredients:
1.5 cups ground oats (or oat flour) (150g) 1 cup old-fashioned oats (90g) 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 3 ripe bananas, mashed 2 eggs 1/2 cup honey (170g) 1/2 cup melted butter (120g) 1/2 cup Greek yogurt (145g) 1 tsp vanilla Preparation:
In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter. In a separate bowl, mash the bananas and incorporate into the egg mixture. In another bowl, combine together the dry ingredients, ground oats, old-fashioned oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter. Pour into prepared baking dish, smooth the top and bake at 350F (180C) degrees for 50 minutes. Let it sit for 15 minutes, then remove from the baking pan and set aside to cool completely. Slice and serve with your favorite topping.

One Pot Baked Chicken and Potato Dinner
One pan baked chicken and potatoes tossed in the most flavorful spice combo and baked in the oven until juicy tender.
Ingredients for the chicken
2 Lb Chicken thighs 1 Onion Cut into chunks 2 Tbsp Olive oil 1/2 Onion powder 1 Tsp Rosemary 1 Green Pepper Cut into chunks Chili pepper flakes optional 1 Tsp Garlic powder 2 Tsp Paprika 1 Tsp Salt or to taste 1 Tsp Black pepper 10-12 baby Carrots Wash the chicken and season with all the spices and add the Olive Oil. Mix the Chicken thoroughly with the spice and set aside for 5 to 10 minutes. Directions for Potatoes Wash the potatoes and pat them dry with a paper towel or a clean kitchen towel. Cut the potatoes in half. Throw them into the baking pan. Add the Carrots, Onions, green peppers, season with salt, pepper, paprika, and olive oil and mix together. Place the Chicken over the seasoned potatoes and vegetables and bake at 425°F for 45 to 50 minutes or till the chicken and potatoes are perfectly cooked through. An instant-read thermometer inserted through the thickest part of the chicken should read 165 degrees F (74 degrees C).

Instructions:
- Rinse basmati rice till the water runs clear of starch. Soak the rice for 30 mins and then drain all the water. Keep aside.
- Heat 4 cups water till it comes to a boil. Add all the whole spices. Add rice and salt. Simmer the rice on a low flame uncovered.
- The rice grains should be cooked till tender and yet separate. Drain the water and keep the cooked rice aside.
- If you want you can rinse also the rice with water at room temperature. This stops the cooking of the rice and keeps the grains separate.
- Heat oil in a small pan. Add cumin/jeera.
- Let them crackle. They have to be fried well otherwise you will taste uncooked cumin in the rice.
- Add the spices. Stir for a few seconds.
- Add the tempering to the hot or warm rice.
- With a fork, gently mix the tempering with the rice grains. Even if some rice grains break, its alright. Do gently taking care so as not to break the rice grains.
- Add coriander and gently mix or garnish the rice with coriander at the time of serving.
- Serve jeera rice hot or warm with a dal or vegetable/paneer curry of your choice.

Aloo Jeera (Potatoes with Cumin)
Jeera Aloo is a typical vegetarian Indian dish which is often served as a side dish and normally goes well with hot puris, chapatti, roti or dal. Its main ingredients are potatoes, cumin seeds and Indian spices. Other ingredients are red chili powder, ginger, coriander powder, curry leaves, vegetable oil and salt.
you just need to boil some potatoes first and then saute them with spices. If you already have boiled potatoes, then making jeera aloo becomes very quick.
Boil or steam potatoes along with ½ teaspoon salt, till they are cooked well. When the potatoes cool down or become warm, then peel them and chop in small cubes.
In a pan, heat 3 tablespoons oil. Let the oil become hot. You can heat oil on medium flame. Add 2.5 teaspoons cumin seeds (jeera) and let them crackle in oil. Stir quickly as the cumin seeds will begin to crackle in oil quickly.
Once the cumin seeds crackle and change color, then add 2 to 3 finely chopped ginger. Add all the spices and mix very well. Then add the boiled potato cubes.
Saute the potatoes for 2 to 3 minutes on low to medium flame stirring often. Next add some chopped coriander leaves.

How to Make a Perfect Over-Easy Eggs
If you like over easy eggs, but hate to flip them, here's a nice thing I learned while cooking for a living. Have a nice flat pan or a skillet that allows for a flat center. Get a cup with some water, and a good lid that covers the pan or at least the eggs.
Heat your oil or butter to warm, drop in the eggs and immediately make a circle of water around the edge of the egg(s). Cover and steam them till the yolks are white and not yellow. Voila!

Instructions
Lightly spray a medium low heat skillet with cooking spray or use a pat of butter. Gently crack two eggs into the skillet keeping the yolk intact and keeping them separated in the pan. When whites are set around the edges, season with salt and pepper.
Add 1-2 tablespoons of water the middle of the pan and sides of the eggs. Cover with the lid and increase the heat slightly so the water begins to steam and bubble. When you see a white cloud inching up the sides of the yolks, they're almost done. When the yolk is completely covered by white, they are done! Serve immediately.

It is safe to cook chicken and vegetables together as long as you practice safe food handling throughout the preparation and baking processes. The best is to brown the chicken first, and add the vegetables. This allows the chicken to reach a good internal temperature before the vegetables are done completely.
