Gluten Free Coconut Flour Pancakes

Ingredients
4 egg, omega-3, cage-free, organic
1/4 c. coconut flour, organic
1/4 c. coconut milk, unsweetened, homemade, organic
1 tbs. maple syrup, pure, organic
1/4 tsp. vanilla extract, organic
1 pinch nutmeg, organic
1 pinch cinnamon, ground, organic
Directions
In a large bowl, whisk the eggs really well. Sift in the coconut flour, and quickly whisk to mix well. Add coconut milk, and continue to mix well. Optional: Stir in maple syrup (or use raw honey) and seasonings. Use butter to grease griddle at 325ºF or pan over medium heat. Use a tablespoon to pour batter onto the griddle for each pancake. Cook, allowing each side to brown before flipping it. Pour about 1/4 cup of batter onto the griddle for each pancake, allowing each side to brown before flipping it. (Watch carefully so they don’t burn!)

2 Ingredient Pancakes
Did you know you could make pancakes with just two ingredients? I have made several different versions of Paleo pancakes now and this 2-ingredient one has to be the easiest ever! They're the best 2 ingredient pancakes ever and so yummy!
Ingredients:
- 2 small ripe bananas
- 2 eggs, lightly beaten
Directions:
- Mash bananas well. Whisk in eggs until well combined. Heat a non-stick frying pan over a low-medium heat. Place 1/2 tablespoon of coconut oil into a frying pan. Pour in 1/3 of a cup of the batter. Cook until bubbles form all over the surface and flip. Cook a further 1-2 minutes and serve. Enjoy!
Note: If you cook these really fast they will stay mushy inside. Make sure you use a low-medium heat for the best results.

Paleo Strawberry Pancakes
Ingredients:

- 1.5 cups blanched almond flour
- 3 eggs
- 1 cup milk
- 1 cup sliced strawberries
- Ghee or coconut oil for cooking
- Mix all ingredients in a medium sized bowl using a hand blender or immersion blender until batter is a pourable consistency.
- Make one test pancake to check for desired thickness and texture.
- In a pan over medium-low heat (I set mine just below medium), melt some fat. Ladle about 1/4 cup batter onto the griddle for each pancake Place a small handful of sliced strawberries on top of the pancakes.
- Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown. Enjoy!

Paleo Coconut Bacon Pancakes
Ingredients:
- 3 slices bacon
- 2 eggs
- 1 banana, chopped
- 1 tsp vanilla extract
- 2 tsp coconut flour
- 1 pinch baking soda
- 1 pinch baking powder
Directions:
- Place the bacon in a medium skillet and cook over medium-high heat, turning occasionally, until evenly browned. Drain the bacon slices on paper towels and cut bacon in small pieces.
- Beat eggs and banana in a bowl with an electric mixer until smooth. Beat chopped bacon pieces, and vanilla extract into egg mixture. Whisk coconut flour, baking soda, baking powder, and salt into egg mixture until batter is just combined.
- Heat a skillet over medium-high heat and lightly grease with bacon drippings. Drop batter by large spoonful's onto the griddle and cook until bubbles form and the edges are dry. Flip and cook until browned on the other side, 2 to 3 minutes. Serve immediately with maple syrup on top. Enjoy!
Banana Peanut Butter Oat Pancakes
Oatmeal adds texture to a hearty, satisfying pancake. These easy and delicious pancakes are gluten free, dairy free and free of refined sugars. These delicious pancakes make for a satisfying and filling breakfast that will keep you energized all morning.
Ingredients
- 2 cups gluten free oats or steel cut oats
- 1 1/4 cups vanilla almond milk
- 1 ripe, banana
- 1/2 tsp ground cinnamon
- 1 tsp honey
- 1/4 tap salt
- 2 tbsp. Peanut butter
- 1 tsp pure vanilla extract
- 1 1/2 tsp baking powder
- 1 egg
- coconut oil or butter for cooking
- Place all ingredients, except egg and coconut oil in the base of a blender and blend until smooth. Add egg and blend it for another minute.
- Heat a cast iron pan over medium heat and melt a coconut oil. When hot, pour or scoop the batter onto the pan. Brown on both sides (about 2-3 minutes per side) and serve hot with maple syrup. Enjoy!

Banana Oatmeal Protein Pancakes
These heavenly, light and fluffy, no flour protein pancakes are so yummy! You can top your Protein Pancakes with whatever topping you want. I suggest some of my favorite combinations, peanut butter & honey, coconut oil and maple syrup, and banana slices and chopped walnuts! You could even add chocolate chips or blueberries to the batter before tossing onto the frying pan.
Dry Ingredients:
- 1 cup of oat flour or steel cut oats
- 1 scoop of vanilla protein powder
- 1 tsp. of baking powder
- Pinch of salt
- 1/2 tsp. of ground cinnamon
- 1/2 tsp. of ground allspice
Wet Ingredients:
- 2 egg whites
- 1 banana
- 1/3 cup of unsweetened almond milk
- 1 tsp. of coconut oil
Directions:
- In a bigger bowl mix the dry ingredients together and set aside. In a smaller bowl, mash up 1/2 the banana, and add the remaining wet ingredients except for the coconut oil and mix together. Add the wet ingredients to the dry ingredients and whisk together. Slice up the remaining ½ banana and set aside. Add the coconut oil to a non-stick pan. Add mixture to pan and place sliced bananas on top of each pancake. Lightly press down on the banana slices into mixture with your fingers. Cook mixture like you would cook regular pancakes. This recipe makes 3 pancakes. Enjoy!

Cocoa Pancakes
- 1 small banana
- 3 tbsp. almond flour
- 3 eggs
- 1 tbsp. coconut oil
- 3 tbsp. cocoa powder
- 1 tbsp. stevia or honey (optional)
Directions:
Peel banana and place it into food processor or blender. Add in eggs, almond flour and raw cacao powder. Mix together. Add in coconut oil and continue to blend together.
Heat up skillet or griddle on medium-low heat. Scoop about 3-4 tablespoons of batter and cook until bubbly on top and golden on the bottom. Flip and cook until golden on the bottom, Serve immediately with butter on top and light maple syrup. Enjoy!

Paleo Carrot Cake Pancakes
These pancakes are pretty fabulous! Instead of having a slice of calorific and heavy carrot cake, why not make these carrot cake pancakes instead? A great alternative.
Ingredients
- 1½ cups almond flour
- ½ cup honey or apple sauce (I used honey in mine)
- 2 cups finely shredded or chopped carrots
- 6 eggs
- 1½ tsp. baking soda
- 2 tbsp. ground cinnamon
- 1 tsp. ground nutmeg
- 2 tsp. chopped walnuts
- Coconut oil
Directions:
Combine the almond flour, baking soda, cinnamon, walnuts and nutmeg in a large bowl. Add the remaining ingredients and mix until well blended.
Preheat a skillet over a medium-high, and add some coconut oil. Pour about half a cup of pancake mixture onto the skillet, and cook on each side for about 3 minutes. Repeat for each pancake.

Paleo Banana Blueberry Pancakes
A quick, easy, flourless and low-calorie banana breakfast in a minutes. These banana pancakes have very light texture because there is no flour in it. It makes simple and healthy breakfast.

- Blueberries...
- 2 Large Egg
- 1-1/2 Large Ripe Banana
- Peel and slice banana.
- Mash banana and add egg.
- Mix until fully combined.
- Heat a skillet on medium.
- Apply coconut oil or butter to the skillet.
- Use only 1 or 2 tablespoons of batter for each mini pancake. Remember the smaller, the more manageable the pancakes are.
- Add blueberries to taste.
- Cook each side until lightly brown. Enjoy!

Paleo Sweet Potato Pancakes
Ingredients:
1/2 cup sweet potato, mashed
2 eggs
1 tbsp. almond flour
1 1/2 tsp cinnamon
1/4 tsp vanilla
coconut oil, for pan
Directions:
Mix together all ingredients and beat just until a batter forms.
Heat coconut oil in a skillet over medium heat. Pour about 1/4 cup of batter out and cook until bubbles start to form. Flip the pancake and cook for about another minute or two until fully cooked.
Repeat with the rest of the batter. Enjoy!

Paleo Chocolate Chip Pancakes
Ingredients
- 3 medium eggs
- 1/4 cup coconut or almond milk
- 1 teaspoon vanilla
- 2 teaspoons of protein powder
- 1 teaspoon honey
- 2 tablespoons coconut flour
- 1/3 cup blanched almond flour
- 1/2 teaspoon baking soda
- 1/4 cup chocolate chips
- Butter or coconut oil for the pan
Directions
Mix together the wet ingredients, beating well until the eggs are beaten and slightly foamy.
Combine the dry ingredients in a separate bowl, then incorporate them into the wet. Whisk well until combined, then let sit for 3-5 minutes to let the coconut flour soak up some of the moisture.
Heat a cast iron pan over medium-high heat.
Oil the pan with or butter, then pour about a 1/4 cup of batter per pancake. Once they begins to bubble, place a couple of slices of banana and a pinch of chocolate chips on top. Flip the pancake over, and cook for another minute until the pancake has fluffed up an feels slightly firm.

Paleo Pancakes

Note: you could add spices like cinnamon and nutmeg, vanilla, blueberries or other flavors.

Healthy Banana Pancakes: Just Three Ingredients!

How would you like to conjure up some delicious pancakes for breakfast this morning? Now, how would you like these pancakes to be full of nutrients; I'm talking heaps of muscle-friendly potassium, phosphorus, protein and an abundance of healthy energy? Are you still on the fence about this great breakfast decision? Well, how would you like to be able to make this delicious recipe with only three ingredients? That's right, just three ingredients. I thought I'd get your attention!
I was quite curious to test the basics of this recipe in order to see how close it came to traditional pancakes. I'm very happy to tell you that banana pancakes are absolutely delicious. They're surprisingly filling and very close in appearance to their real, less healthy namesakes.

You can top banana pancakes with fruit, sliced banana or a little maple syrup. I'd recommend almond butter as an outstanding flavour and health choice!
Ingredients:
- 2 eggs
- 1 ripe medium-sized banana
- 1 tsp. peanut butter
If you're allergic to peanut butter substitute it with almond butter or coconut flour.

Mash the banana thoroughly with a fork. Whisk two eggs and add the eggs right into the mashed banana.

Stir in the teaspoon of peanut butter.

Alternately, use a food processor to blend all three ingredients in one go, process the ingredients until they are smooth.

Pour your mixture onto the griddle forming small circles, about the size of your palm, form them no larger or they'll be hard to turn over. Keep the heat on low for the same reason.
When the edges start to cook, turn them over. Allow the mixture to cook right through.
