Cajun Chicken And Eggs

  • 12 oz. tomatoes, fresh or canned
  • 4 eggs
  • 1/4 cup milk
  • salt and pepper to taste
  • 1/4 tsp. cumin powder
  • 1.5 tbs. Butter
  • 1/4 cup chopped green pepper
  • 1/4 cup red pepper
  • 1 cup cooked chicken
  • hot pepper sauce to taste

  • In a small saucepan over medium-high heat, cook the tomatoes until the are cooked. Reduce heat to simmer. In a medium bowl, beat the eggs with the milk, the salt and pepper, and the cumin. In a large skillet over medium high heat, melt the butter.
  • Add the chopped cooked chicken to the skillet and stir. Pour the eggs over the ingredients in the skillet. Once the eggs begin to set, stir the contents of the skillet occasionally to scramble. When the eggs are done, add the hot sauce over the eggs. Enjoy!
