Balsamic Baby Carrots


This roasted baby carrots recipe is a simple side dish flavored with natural sweetness of the carrot balances beautifully with the balsamic vinegar.
Ingredients:
  • 1.5 pounds baby carrots
  • 2 tbsp coconut oil
  • 2 tbsp balsamic vinegar 
  • Salt and pepper to taste 
  • Fresh cilantro
Directions:

Preheat oven to 400 degree F. Rinse and pat dry carrots. In a small bowl add the balsamic vinegar, then slowly add the olive oil. Mix well, now pour the balsamic mix over top off the carrots. Toss the carrots until well coated. Pour them onto the baking sheet.

Place in oven and roast them for about 30 to 40 minutes. Remove from oven. Transfer to a bowl. Sprinkle with coarse salt, pepper and cilantro or parsley. Enjoy!
