Chicken Club Lettuce Wraps


Ingredients:
  • 1/2 cup chopped cooked chicken breast ...
  • 3 tbsp. chopped Fuji apple
  • 2 tbsp. chopped black or red grapes
  • 2 tbsp. Adams Crunchy Peanut Butter
  • 1 tbsp.. lite mayonnaise
  • 2 tsps. honey
  • Iceberg lettuce
Directions:
  • Chop chicken meat and fruit, mix in bowl. Mix in peanut butter, mayonnaise and honey.
  • Spoon into open lettuce leaf, roll and serve.

BLT Lettuce Wraps


Ingredients:
  • 4 slices on bacon
  • 1 cherry tomato, sliced thin
  • 2 whole romaine leaves
  • 2 tablespoons greek yogurt
  • Salt and pepper to taste 
Directions:
  • Spread each lettuce leaf with a generous portion of Greek yogurt.
  • Sprinkle with salt & pepper
  • Top with two strips of bacon, then a layer of sliced tomatoes, and two more slices of bacon.
  • Enjoy!

Bacon-Apple Pie


Ingredients:
  • 5 slices bacon, cut in half
  • 1 large apple
  • Cinnamon, optional
 
Directions:
  • Cut the sides off of the apple, leaving the core in the middle. Then cut the apples into smaller wedges. Wrap bacon around wedge of apple, covering as much apple as possible. Place seam side down on the rack of a counter top oven.
  • Bake at 375 degrees F for 10 minutes in counter top oven then flip and cook an additional 5 minutes or until bacon is crisp. Enjoy!

Bacon and Vegetable Frittata


Ingredients:
  • 3 Eggs
  • 2 tablespoons coconut milk
  • 2 slices bacon, cooked and crumbled
  • 1/4 cup chopped broccoli
  • 1-2 green onions, finely diced
  • 1/4 cup cheese
  • 1 small tomato, diced
  • Salt and pepper to taste
  • butter or coconut oil for cooking
Directions
  • Preheat your broiler. Cook the broccoli and green onion in butter or coconut oil over medium for about 3-5 minutes. Add tomatoes and continue to cook a few more minutes.
  • Combine the egg, milk, cheese, salt and pepper and mix until combined. Add the bacon and the egg mixture to the skillet and cook until the edges start to look set.
  • Gently lift the edges up with a spoon to allow the runny egg to go down underneath and cook. Cook for 3-4 minutes, or until the egg is just runny in the center.
  • Place the skillet on a rack about 6 inches below your broiler and broil for 3-5 minutes. Enjoy!

Breakfast Casserole


This bacon, egg and cheese breakfast casserole is seriously one of the best things ever. It's easy to prep the night before, then pop it in the oven morning of for an absolutely delicious breakfast. 
 
Ingredients
  • 6 large eggs 
  • 2 cups milk 
  • 1 tsp. salt 
  • 1/2 tsp. dry mustard 
  • 6 - 9 slices bread, cubed 
  • 12 slices bacon, cooked and chopped 
  • 1 cup cheddar cheese, grated 
Directions:
  • Grease a 9" x 13" baking dish.
  • Mix together the eggs, milk, salt and dry mustard.
  • Spread the bread cubes in the bottom of the dish, sprinkle over the bacon and cheddar cheese. Pour the egg mixture over the top.
  • Cover with plastic wrap and refrigerate overnight, then bake at 350 F for 45 - 60 minutes.

Bacon Wrapped Meatloaf

 
Take your meatloaf to the next level with this Yummy Bacon Wrapped Meatloaf. It's spectacular.
 
Ingredients:
  • 2 pounds lean ground beef
  • 1 small onion, chopped
  • 1/2 cup cooking oats
  • 2 cloves garlic, minced
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 egg, lightly beaten
  • 2 tbsp. ketchup
  • 7-10 slices bacon

Directions:
  • Preheat oven to 375º F. Add ground beef, onion, garlic, Worcestershire sauce, salt, black pepper, egg, and oats to a large bowl. Mix together until well combined. Shape meat into a rectangular shaped loaf and place on a broil pan that has been sprayed with non-stick cooking spray.
  • Spread ketchup on top of loaf and place bacon slices on top, tucking edges underneath. Sprinkle liberally with spicy brown sugar dry rub. Bake for 1 hour, until internal temperature registers 155º F - 165º F, based on your preference. Remove from oven and allow to rest about 10 minutes before slicing and serving. Enjoy!

Parmesan Crusted Chicken with Bacon



Ingredients:

4 boneless skinless chicken breasts
1 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp pepper

1/2 teaspoon dry basil
 1/2 tsp salt
1-1 1/2 cups shredded Asiago cheese – for melting on top
3-4 slices bacon, cooked and crumbed
1 egg beaten
1 tablespoon water


Directions:

Preheat oven to 350 degrees. In a small bowl, mix egg and water. In another bowl, mix Parmesan cheese, basil, pepper, salt and garlic.  Dip each chicken breast first in egg mixture then in cheese.

Place chicken in baking pan and bake about 25-30 minutes. After chicken has been cooking for 25- 30 minutes, turn oven to broil. Top each piece of chicken with Asiago cheese and bacon and place under broiler to melt cheese. Enjoy!!



Bacon-Wrapped Asparagus



Ingredients:
  • 7 asparagus spears
  • 7 slices of bacon
  • A little butter for frying
Directions:

Wash asparagus and cut 2 cm off the ends. Place each bacon strip on a chopping board at a 45 degree angle. Place one of the asparagus spears on top of the meat, perpendicular to it. The tip of the asparagus should be lined up with the bottom of the bacon strip. Wrap the bottom end of bacon over the asparagus and holding the meat tight, start rolling the asparagus up.

The bacon strip will wrap around the whole length of the spear because it’s on an angle. You can try a different wrapping method and don’t worry if parts of the asparagus spears are not covered completely.Heat some ghee in a large, flat frying pan to sizzling hot. Fry wrapped asparagus spears for 1-2 minutes on each side or until bacon is brown and crispy. Enjoy!

Sautéed Kale and Bacon Salad


 
Grilled kale and bacon bring smokiness to this warm, rich side dish that's perfect for a barbecue.
Ingredients:
  • 8 slices bacon
  • 2 bunches kale, stems removed and leaves finely chopped
  • 1/2 white or red onion, chopped
  • Sea salt to taste
  • Coconut oil
Directions:

Start by slicing the uncooked bacon into 1/2 inch pieces. In a large skillet, cook bacon pieces over medium-high heat until nicely browned. Remove from pan and set aside. Over medium heat, cook the chopped onion for several minutes until slightly browned.

Add chopped kale and stir continually until the kale is wilted. You may want to add a bit more coconut oil at this point. Remove from heat and add bacon and salt to taste. Stir until combined. Serve immediately. Enjoy!

Bacon Banana Bites


Ingredients:

I medium banana
5 slices of bacon
Natural Maple Syrup

Direction:

Pre-heat the oven to 180 degrees. Cut the banana’s into inch size pieces. Wrap the banana pieces in bacon, you may have to cut bacon to size. Secure the bacon with a tooth pick. Place in oven on baking tray and bake for approx. 15 minutes until the bacon is cooked. Serve with a side of natural maple syrup for dipping. Enjoy!

Balsamic Avocado Boat



 
Ingredients:
  • 4 slices of bacon, cooked
  • 2 T butter
  • 1 T balsamic vinegar
  • 1 tsp minced garlic
 Directions:
 
Cut your avocados in half lengthwise and remove the pits. Crumble the bacon and stuff it into the avocado half where the pit was – use one piece of bacon per avocado half.
 
Over low heat, melt the butter, balsamic and garlic. Stir constantly for about a minute or two until the mixture is boiling. Remove from heat and drizzle all over the avocado halves. Enjoy!

Green Eggs With Red Salsa




Ingredients:

2 large eggs
1 cup fresh spinach
1 tbsp chopped green onions
1 tbsp chopped green pepper
2 tbsp olive oil Salt and pepper to taste

Directions:

In a small bowl, beat the egg and salt and pepper to taste, mix well. Set aside. In nonstick skillet, saute the green peppers and green onions in oil for 4-5 minutes or until tender.

Add spinach; cook and stir until spinach is wilted. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Serve immediately with salsa. Enjoy!

Egg In a Hole

 
 
 
 
 
Great breakfast idea! These are awesome and crazy fast to make. These make a great post workout snack too!

Ingredients:

1 bell pepper, cored
1 tbsp. coconut oil
6 eggs
salt and pepper, to taste

Directions:

Cut the bell pepper from top to bottom in slices that resemble rings. Prepare a skillet with a light layer of coconut oil.

Place 6 of the bell pepper rings on the skillet over medium heat. Crack an egg in each ring and allow it to spread out to fill the bell pepper ring. Season the eggs with salt and pepper, to taste.

For soft eggs, cook over low heat for 3-5 minutes, or until the eggs are cooked to preference. Serve with fresh salsa if you like. Enjoy!





Cauliflower and Bacon







Simple roasted cauliflower recipe featuring bacon and garlicky goodness. Kick a simple roasted cauliflower dish up a notch on the delicious scale with smoky bacon.

Ingredients:

1 head cauliflower, cut into small florets
6 cloves garlic, sliced
3 strips bacon, cut into small pieces
2 teaspoons coconut oil
sea salt and freshly ground black pepper to taste

Directions:

Preheat oven to 375F. On a baking sheet, toss together the cauliflower, garlic slices, bacon and coconut oil. Roast for 20-25 minutes until bacon is crisp and cauliflower is cooked. Season the roasted cauliflower with salt and pepper to taste. Enjoy!

Note: You can add fresh grated cheese at the end, just before serving if you like.
