Parmesan Spinach & Kale Balls

  • Olive oil cooking spray
  • 1 (16-oz) package frozen chopped spinach, thawed and drained
  • 1 cup finely chopped onion
  • 1 tsp olive oil
  • 2 large eggs, beaten
  • 1 (16-oz) package frozen kale, thawed and drained
  • 1 cup dry seasoned bread crumbs
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ½ tsp garlic powder

  • Preheat oven to 350 degrees. Line a baking sheet with a silicone baking mat or parchment, or spray with cooking spray. In a large bowl, combine spinach, onion, the olive oil, and eggs together. Add kale, bread crumbs, Parmesan cheese, salt, garlic powder and black pepper; mix thoroughly using your hands.
  • Form mixture into 1½-inch balls and arrange on the prepared baking sheet. Bake in the preheated oven for 15 minutes; turn and continue baking until lightly browned, 10 to 20 more minutes. Enjoy!
