Bruschetta Chicken

2 chicken breast, skinless
3 sml. tomatoes, red, fresh
1 garlic cloves, fresh
0.25 sml. onion,
0.5 tsp. olive oil, extra virgin
0.5 tsp. vinegar, balsamic
sea salt & fresh ground pepper to taste


Preheat oven to 375ºF. Season chicken with salt and pepper. Place in baking dish or on baking sheet. Bake for 35-40 minutes, until juices run clear. While chicken is baking, combine chopped tomatoes, minced garlic, diced onions, olive oil, balsamic vinegar, a pinch of sea salt, and a pinch of pepper. Refrigerate until chicken is ready to served. Spoon over top of the chicken.
