Paleo Carrot Cake Pancakes

These pancakes are pretty fabulous! Instead of having a slice of calorific and heavy carrot cake, why not make these carrot cake pancakes instead? A great alternative.

  • 1½ cups almond flour
  • ½ cup honey or apple sauce (I used honey in mine)
  • 2 cups finely shredded or chopped carrots
  • 6 eggs
  • 1½ tsp. baking soda
  • 2 tbsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 2 tsp. chopped walnuts
  • Coconut oil



Combine the almond flour,  baking soda, cinnamon, walnuts and nutmeg in a large bowl. Add the remaining ingredients and mix until well blended.

Preheat a skillet over a medium-high, and add some coconut oil. Pour about half a cup of pancake mixture onto the skillet, and cook on each side for about 3 minutes. Repeat for each pancake.
