Green Eggs With Red Salsa


2 large eggs
1 cup fresh spinach
1 tbsp chopped green onions
1 tbsp chopped green pepper
2 tbsp olive oil Salt and pepper to taste


In a small bowl, beat the egg and salt and pepper to taste, mix well. Set aside. In nonstick skillet, saute the green peppers and green onions in oil for 4-5 minutes or until tender.

Add spinach; cook and stir until spinach is wilted. Add egg mixture. As eggs set, lift edges, letting uncooked portion flow underneath. Serve immediately with salsa. Enjoy!
