Ingredients:
- 2 slices multigrain bread
- 1/2 ripe avocado
- 1 tbsp. green onions
- 3 ounces cooked boneless, skinless chicken breast, sliced
- 4 thin slices of cucumber
- Salt and pepper to taste
- 1 tbsp. Lime juice
- 2 tbsp. cilantro
Directions:
When ready to eat, toast the bread. Divide the chicken salad evenly between 2 slices of toasted bread. Make layers of fresh spinach and cucumber. Top with remaining slices of bread. Enjoy!
Why the heck did you cut the crusts off the bread? What a waste! Otherwise, the recipe is awesome!
ReplyDeleteSome people just like cutting the crust off and if you are watching carbs, that is an easy way to cut a little out. Don't judge. Just leave your crust on if you want.
