Avocado Chicken Salad

  • 2 slices multigrain bread
  • 1/2 ripe avocado
  • 1 tbsp. green onions
  • 3 ounces cooked boneless, skinless chicken breast, sliced
  • 4 thin slices of cucumber
  • Salt and pepper to taste
  • 1 tbsp. Lime juice
  • 2 tbsp. cilantro

Mash avocado with a fork. Add green onion, lime juice, salt, pepper and cilantro. Fold in shredded chicken. Mix well.

When ready to eat, toast the bread. Divide the chicken salad evenly between 2 slices of toasted bread.  Make layers of fresh spinach and cucumber. Top with remaining slices of bread. Enjoy!


  1. Why the heck did you cut the crusts off the bread? What a waste! Otherwise, the recipe is awesome!

    1. Some people just like cutting the crust off and if you are watching carbs, that is an easy way to cut a little out. Don't judge. Just leave your crust on if you want.

    2. Duhhh! Yes, if you don't like the crust, just omit it from yours. I personally like it without it too....

  2. You don't list spinach in the ingredients but it's in the directions. About how much do you use?

  3. Also, is it really 4 slices of bread since you "..evenly between 2 slices of toasted bread. Make layers of fresh spinach and cucumber. Top with remaining slices of bread..."??? That is, does this recipe really make 2 sandwiches?

  10. I am on a strict meal plan for diabetes, high cholesterol, etc. This sandwich is perfect, the portions for every ingredient are just right. Healthy, delicious, perfect. Thank you for sharing with us.
