Chickpea Avocado Salad


Ingredients:

1 cup chickpeas, cooked
1 avocado, chopped
1/4 cup lemon juice
1/2 cup fresh cilantro, chopped
1 tsp. salt and pepper
2 tbsp. extra virgin olive oil

Directions:

Add chickpeas in a large bowl. Use a mini chopper or mash the avocado by hand in a bowl and mix in olive oil and lemon juice. Mix into chickpeas and add salt and pepper to taste. Sprinkle cilantro on top and serve. Enjoy!
