- Blueberries...
- 2 Large Egg
- 1-1/2 Large Ripe Banana
- Peel and slice banana.
- Mash banana and add egg.
- Mix until fully combined.
- Heat a skillet on medium.
- Apply coconut oil or butter to the skillet.
- Use only 1 or 2 tablespoons of batter for each mini pancake. Remember the smaller, the more manageable the pancakes are.
- Add blueberries to taste.
- Cook each side until lightly brown. Enjoy!
