Banana Oatmeal Protein Pancakes


These heavenly, light and fluffy, no flour protein pancakes are so yummy! You can top your Protein Pancakes with whatever topping you want. I suggest some of my favorite combinations, peanut butter & honey, coconut oil and maple syrup, and banana slices and chopped walnuts! You could even add chocolate chips or blueberries to the batter before tossing onto the frying pan.
 
Dry Ingredients:
  • 1 cup of oat flour or steel cut oats
  • 1 scoop of vanilla protein powder
  • 1 tsp. of baking powder
  • Pinch of salt
  • 1/2 tsp. of ground cinnamon
  • 1/2 tsp. of ground allspice
 
Wet Ingredients:
  • 2 egg whites
  • 1 banana
  • 1/3 cup of unsweetened almond milk
  • 1 tsp. of coconut oil
Directions:
  • In a bigger bowl mix the dry ingredients together and set aside. In a smaller bowl, mash up 1/2 the banana, and add the remaining wet ingredients except for the coconut oil and mix together. Add the wet ingredients to the dry ingredients and whisk together. Slice up the remaining ½ banana and set aside. Add the coconut oil to a non-stick pan. Add mixture to pan and place sliced bananas on top of each pancake. Lightly press down on the banana slices into mixture with your fingers. Cook mixture like you would cook regular pancakes. This recipe makes 3 pancakes. Enjoy!
