Heavenly Banana Bread

"This is the best banana bread my family and I have had that didn't sacrifice the delicious flavor and texture of "normal" banana bread."


1.5 c. almond flour
1.5 c. flour, spelt, whole-grain
2 tsp. baking soda, pure
0.13 tsp. sea salt, unrefined and pure
4 egg,
2 tbs. coconut sugar
3 banana, fresh
0.25 c. coconut oil, raw, extra-virgin
3 tsp. vanilla extract
2 tbs. maple syrup, pure
3 tsp. cinnamon, ground


Preheat the oven to 350°F. Grease bread pan with a little coconut oil. Mix together the almond flour, spelt flour, baking soda and salt in a large bowl. In a separate bowl mix the eggs, coconut sugar, bananas, melted coconut oil and vanilla (the coconut sugar is for a little extra sweetness, so add to your liking). Add the dry mixture into the wet mixture slowly while blending. Then blend in the maple syrup and cinnamon. (The syrup is for sweetness, so add according to your liking.) Bake for 1 hour. You may want to watch your timing because it could be anywhere between 45 minutes and 1 hour depending upon your oven. *The more ripe your bananas are, the better your banana bread is.
