Roasted Garlic Parmesan Broccoli

Best Broccoli Ever!!

Very simple side dish that pairs well with just about anything from fish to steak.  Buying pre-cut broccoli makes for even quicker prep. All of the other ingredients are pantry staples, so it is great for last minute suppers. Broccoli's nutritional profile is impressive. It contains high levels of fiber (both soluble and insoluble)and is a rich source of vitamin-C.
  • 3 small heads broccoli
  • 3 to 4 tablespoons extra virgin olive oil
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 1  tbs lemon juice
  • 3 cloves of sliced  or minced garlic
  • 3 tbs of Parmesan cheese
  1. Preheat the oven to 425ºF.
  2. Trim the broccoli from the stem and cut into small florets.
  3. In a large bowl, place the olive oil, salt, and broccoli and toss to coat. Spread in a single layer on a baking sheet.
  4. Bake 15-25 minutes, stirring occasionally, until the edges of the broccoli are slightly brown and crispy. Squeeze lemon over and sprinkle with Parmesan cheese and serve.
