Ingredients:
- 3 teaspoon coconut oil
- 4 cup packed fresh baby spinach leafs
- 2 teaspoon onion powder
- 3 clove garlic, minced
- salt and pepper to taste
- 4 eggs
Directions:
- Preheat oven to 350 degrees F.
- Melt coconut oil in a skillet on medium high heat.
- Add the spinach and cook until wilted about 3 minutes.
- Add the onion powder and the garlic and saute about 30 seconds.
- Crack an eggs on top of the spinach.
- Season with salt and pepper.
- Bake for about 20 minutes.
Note: If you want to use a stove instead of the oven, you can easily make 4 wells in the wilted spinach in a large pan and drop the eggs into each one, then cover and cook on low until the eggs are done.
