Hot Spinach and Kale Salad



 Ingredients:
  • 1½ Tbsp extra virgin coconut oil or butter
  • 2 cups kale, chopped
  • 3 cups fresh spinach
  • ¼ cup dried cranberries
  • 1 Tbsp chopped garlic
  • 2 Tbsp sliced almonds
  • 1 Tbsp sunflower seeds
  • 1 Tbsp pine nuts
Directions:
  • Heat coconut oil in a cast iron skillet over medium-high heat.
  • Add garlic. Cook, stirring frequently.
  • Add cranberries and continue to cook 2-3 more minutes.
  • Add spinach and kale. Stir and cook until spinach is wilted. Stir in almonds. Enjoy!
