Ingredients:
- 1½ Tbsp extra virgin coconut oil or butter
- 2 cups kale, chopped
- 3 cups fresh spinach
- ¼ cup dried cranberries
- 1 Tbsp chopped garlic
- 2 Tbsp sliced almonds
- 1 Tbsp sunflower seeds
- 1 Tbsp pine nuts
Directions:
- Heat coconut oil in a cast iron skillet over medium-high heat.
- Add garlic. Cook, stirring frequently.
- Add cranberries and continue to cook 2-3 more minutes.
- Add spinach and kale. Stir and cook until spinach is wilted. Stir in almonds. Enjoy!
