Peanut Butter Banana French Toast


One of my favorite breakfasts! I treat myself to a Banana Peanut Butter French Toast Sandwich on the weekends! It's a delicious and so easy to make.

Ingredients:
  • 2 eggs
  • 1/4 cup almond milk
  • 2 teaspoons vanilla extract...
  • 1/4 teaspoon cinnamon
  • 2 tablespoons peanut butter
  • 4 teaspoons light maple syrup
  • 1 banana
  • 4 slices whole grain or gluten free bread
  • 1 tablespoon coconut oil



Directions:
  • Crack the eggs into a bowl. Add almond milk, vanilla, and cinnamon. Stir with a fork or whisk to combine. In a separate bowl, combine almond butter and maple syrup. Cut banana lengthwise into 4 thin slices then cut crosswise into halves. Spread peanut butter mixture evenly across bread slices. Top 2 bread slices with 4 banana pieces. Place remaining 2 bread slices on top to make a sandwich and press down. Dip sandwiches in egg mixture and let excess drip off. Heat 1-2 teaspoons of coconut oil in a skillet over medium heat. Place the sandwiches in the skillet, and cook for 3-4 minutes on each side. Enjoy!
Note: if you are allergic to peanut butter you could substitute to almond butter.
