Healthy Zucchini Fritters

 

This recipe is unbelievably easy to make, low calorie, and the perfect way to sneak in some veggies!
 
Ingredients:  
  • 2 medium zucchini
  • 1 teaspoon salt
  • 1 large egg, lightly beaten
  • Freshly ground black pepper
  • 1/2 cup almond flour
  • 2 cloves garlic, minced
  • Olive or coconut oil, for frying
 
 
 
Directions:
 
Preheat oven to 200 degrees. Trim ends off zucchini and grate them either on the large holes of a box grater or, if you have one, using the shredding blade of a food processor. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or cheese cloth, drain zucchini completely.
 
In a large bowl, combine zucchini, flour, garlic and egg; season with salt and pepper, to taste. In a large cast iron skillet Heat olive oil over medium high heat. Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about 2 minutes. Flip and cook on the other side, about 1-2 minutes longer. Repeat process, keeping the pan well-oiled, with remaining batter. For extra crisp fritters, put them in the oven for at least 10 minutes.   1. Your recipe says to heat over to 200 but the recipe calls from pan frying. Please advise. This is the 2nd recipe with discrepancies I've found today.

  2. At the end of the recipe you are told to put the fried fritters in the oven to make them crisp.
