Baked Egg With Garlic Spinach

  • 3 teaspoon coconut oil
  • 4 cup packed fresh baby spinach leafs
  • 2 teaspoon onion powder
  • 3 clove garlic, minced
  • salt and pepper to taste
  • 4 eggs

  • Preheat oven to 350 degrees F.
  • Melt coconut oil in a skillet on medium high heat.
  • Add the spinach and cook until wilted about 3 minutes.
  • Add the onion powder and the garlic and saute about 30 seconds.
  • Crack an eggs on top of the spinach.
  • Season with salt and pepper.
  • Bake for about 20 minutes.
Note: If you want to use a stove instead of the oven, you can easily make 4 wells in the wilted spinach in a large pan and drop the eggs into each one, then cover and cook on low until the eggs are done.
