Quinoa Garbanzo Salad


Ingredients:
  • 3 cups cooked quinoa
  • 1 can garbanzo beans, drained and rinsed
  • 1 1/2 cups tomatoes, diced
  • 1/2 cup green onion, finely chopped
  • 1 tsp. garlic, minced or crushed
  • 4 tbsp. fresh lime juice
  • 2 tbsp. olive oil
  • 2 tsp. fresh basil, chopped
  • 3/4 tsp. ground cumin
  • Salt and pepper to taste
Directions:
  • Rinse and cook 3/4 cup quinoa per package directions. Meanwhile, stir together garbanzo beans, tomatoes, green onion, garlic, lime juice, olive oil, cumin, salt & pepper and parsley. Add cooked quinoa and stir. Enjoy!
