Ingredients:
- 3 cups cooked quinoa
- 1 can garbanzo beans, drained and rinsed
- 1 1/2 cups tomatoes, diced
- 1/2 cup green onion, finely chopped
- 1 tsp. garlic, minced or crushed
- 4 tbsp. fresh lime juice
- 2 tbsp. olive oil
- 2 tsp. fresh basil, chopped
- 3/4 tsp. ground cumin
- Salt and pepper to taste
Directions:
- Rinse and cook 3/4 cup quinoa per package directions. Meanwhile, stir together garbanzo beans, tomatoes, green onion, garlic, lime juice, olive oil, cumin, salt & pepper and parsley. Add cooked quinoa and stir. Enjoy!
