Italian Fried Chicken Bites

Excellent grain-free, gluten-free chicken nuggets!


0.33 c. cheese, parmesan
3 tbs. almond flour
0.75 tsp. basil, ground
1 dsh. sea salt
0.13 tsp. nutmeg
1 lbs. chicken breast
2 tbs. olive oil, extra virgin


Combine Parmesan cheese, almond flour, basil, salt, and nutmeg in a small bowl. Fill a second small bowl with water. Cut the chicken into bite-size pieces, and dip in the water, then coat with the dry mixture. In a skillet, heat the olive oil on medium heat. Place the chicken in the pan, and cook until chicken is cooked through, and the "breading" starts to turn a golden color. Make sure to stir the chicken so each side gets cooked. Move chicken pieces to a paper-towel-lined plate to drain. Enjoy!
