There are many different types of curry, all of which come down to a few basic ingredients. You start with cooked onion, ginger, and garlic, add generous heaps of spices, and then bring it together with a liquid base.
Shoulder is the obvious choice. It is flavorful, has a good mix of fat and collagen, and when braised or stewed will turn into delicious soft shreds of incredible meat.
To make Indian curry, start by heating oil in a pan over medium heat. Then, add cumin and cook them until they begin to crackle. Next, add chopped onion, garlic, and ginger, which are considered the “trinity” of Indian cuisine.
Ingredients used to make this Pork Curry:
Pork meat: 1 Kg
Onion: 3 cup (finely chopped)
Tomato: 1 cup (chopped)
Salt as per your taste
Turmeric powder: 1/2 table spoon
Red Chilli Powder: 1 table spoon
Garlic Powder: 1/2 table spoon
Cumin seeds: 1 teaspoon
Ginger: 1 table spoon chopped
Garam Masala: 1 table spoon
Oil to fry
Coriander to garnish
You can serve Indian curries over basmati rice, or you can pair it with jeera rice, a type of basmati rice flavored with jeera (cumin seeds).
