Balsamic Tomatoes

  • 2 pounds of cherry tomatoes
  • 2 garlic cloves, minced
  • 2 tbsps. balsamic vinegar
  • 2 tbsps. olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 tbsp. chopped oregano leaves

  • Preheat the oven to 375°F.
  • Mince the garlic cloves.
  • Slice the tomatoes and place them on a large rimmed baking sheet.
  • Toss them with the olive oil, vinegar and garlic.
  • Season with salt and pepper and place in the oven.
  • Roast for 20 to 25 minutes, until the tomatoes are tender.
  • Remove from the oven and place in a serving dish, stir in the oregano.
