Ingredients:
- 2 pounds of cherry tomatoes
- 2 garlic cloves, minced
- 2 tbsps. balsamic vinegar
- 2 tbsps. olive oil
- Kosher salt
- Freshly ground black pepper
- 1 tbsp. chopped oregano leaves
Directions:
- Preheat the oven to 375°F.
- Mince the garlic cloves.
- Slice the tomatoes and place them on a large rimmed baking sheet.
- Toss them with the olive oil, vinegar and garlic.
- Season with salt and pepper and place in the oven.
- Roast for 20 to 25 minutes, until the tomatoes are tender.
- Remove from the oven and place in a serving dish, stir in the oregano.
