Ingredients:
- 1 medium-sized sweet potato
- 2 large eggs
- 1 tbsp. coconut oil
- Salt and pepper to taste

Directions:
- Preheat oven to 350 degrees
- Grate your sweet potato. I use a cheese grater but you may use a mandolin if you have one (some food processors are also able to grate vegetables)
- Add the grated sweet potato to a cast iron frying pan on high heat.
- Cook the sweet potato until it is brown and softens.
- Crack your eggs into the hash
- Bake for 15-20 minutes, depending on how runny you want your eggs to be.
- Sprinkle with desired seasoning and serve
