Sweet Potato Hash with Baked Eggs

Ingredients:
 
  • 1 medium-sized sweet potato
  • 2 large eggs
  • 1 tbsp. coconut oil
  • Salt and pepper to taste

Directions:

  • Preheat oven to 350 degrees
  • Grate your sweet potato.  I use a cheese grater but you may use a mandolin if you have one (some food processors are also able to grate vegetables)
  • Add the grated sweet potato to a cast iron frying pan on high heat.
  • Cook the sweet potato until it is brown and softens.
  • Crack your eggs into the hash
  • Bake for 15-20 minutes, depending on how runny you want your eggs to be.
  • Sprinkle with desired seasoning and serve
