Paleo Strawberry Pancakes

  • 1.5 cups blanched almond flour
  • 3 eggs
  • 1 cup milk
  • 1 cup sliced strawberries
  • Ghee or coconut oil for cooking

  • Mix all ingredients in a medium sized bowl using a hand blender or immersion blender until batter is a pourable consistency.
  • Make one test pancake to check for desired thickness and texture.
  • In a pan over medium-low heat (I set mine just below medium), melt some fat. Ladle about 1/4 cup batter onto the griddle for each pancake Place a small handful of sliced strawberries on top of the pancakes.
  • Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown. Enjoy!
