Banana Peanut Butter Oat Pancakes


Oatmeal adds texture to a hearty, satisfying pancake. These easy and delicious pancakes are gluten free, dairy free and free of refined sugars. These delicious pancakes make for a satisfying and filling breakfast that will keep you energized all morning.

Ingredients
  • 2 cups gluten free oats or steel cut oats
  • 1 1/4 cups vanilla almond milk
  • 1 ripe, banana
  • 1/2 tsp ground cinnamon
  • 1 tsp honey
  • 1/4 tap salt
  • 2 tbsp. Peanut butter
  • 1 tsp pure vanilla extract
  • 1 1/2 tsp baking powder
  • 1 egg
  • coconut oil or butter for cooking



Instructions
  1. Place all ingredients, except egg and coconut oil in the base of a blender and blend until smooth. Add egg and blend it for another minute. 
  2. Heat a cast iron pan over medium heat and melt a coconut oil. When hot, pour or scoop the batter onto the pan. Brown on both sides (about 2-3 minutes per side) and serve hot with maple syrup. Enjoy!
