Quinoa Corn Salad


Ingredients:
  • 1 cup quinoa
  • 2 cups water
  • 1/2 tsp. salt
  • 2 cans or frozen corn
  • 1 small red onion, minced
  • 1/2 cup spinach, chopped
  • 1 red pepper, diced
  • 3 Tbsp. lemon juice
  • 1/4 cup cilantro, chopped
  • 3 green onions, minced
  • 1 tsp. salt
  • 1/2 tsp. hot sauce (optional)
Directions:

Bring water to a boil in a small pot, add the quinoa and 1/2 tsp. salt and bring to a boil again. Cover and reduce heat to low for 15 minutes. Turn off the heat and keep the pot covered for an additional 5 minutes.

Rinse and drain corn. Combine all the ingredients in a large bowl and lightly toss. Season with additional salt, pepper and hot sauce to taste. Enjoy!
