Paleo Quinoa Pancakes



If you're not sure what to do with leftover quinoa, whip up a batch of fluffy pancakes in the morning. Start the morning off right with these pancakes made from quinoa, an ancient grain that is high in protein and dietary fiber. Quinoa is more gentle on your blood sugar than most other grains, and it also happens to be delicious!

Ingredients:
  • 1 cup cooked quinoa
  • 3/4 cup almond flour
  • 2 teaspoons baking powder
  • 1 large egg, plus 1 large egg white
  • 1 tablespoon butter
  • 1/4 cup almond milk
  • 2 tablespoons pure honey
Directions:
In a medium bowl, whisk together quinoa, almond flour, baking powder. In another medium bowl, whisk together egg, egg white, milk, and honey until smooth. Add egg mixture to almond flour mixture and whisk to Combine.

Lightly coat a large cast iron skillet or griddle with butter and heat over medium-high. Drop batter by heaping tablespoonfuls into skillet. Cook until bubbles appear on top, 2 minutes. Flip cakes and cook until golden brown on bothsides. Serve with maple syrup and fresh fruit. Enjoy!
