Zucchini Pizza Bites

These pizza bites are healthy and cooked in just 15 minutes with only 5 ingredients! You could easily serve these as snacks or as dinner and they are a great way to get your kids to eat more vegetables!


  • 2 large zucchini, cut into 1/4-inch thick rounds
  • 2 -3 tsp olive oil
  • Salt and  pepper
  • 1/4 cup marinara sauce
  • 1/2 cup shredded part-skim marble cheese
  • 1/4 cup cherry tomato's



Rub olive oil both sides of zucchini rounds. Sprinkle with salt and pepper. Broil or grill the zucchini rounds for 2 minutes on each side on a large lined baking sheet.

Top with small amounts of sauce, cheese and tomato pieces, if desired. Broil for an additional 1-3 minutes, or until cheese is melted. Enjoy!
